No, Stipe and jones have similar years in the fight game. Jones being in his late 30s means nothing because he has been a professional MMA fighter longer than Stipe. He has also been in the UFC longer than Stipe and Jones has more fights than Stipe. If the 6 year gap between Jones and Aspinall, while both being in their 30's, is a disadvantage for Jones. Then the same thing can be said about the 5 year gap between Jones and old man Stipe. It's not like Jones winning over a 42 year old Stipe is the same as beating Stipe in his prime..
In combat sports you have a small window of about 10--20 years average when you go pro. Career spans for an MMA fighter is typically around 6-10 years, Jones has been a professional competitor since 2008. He has been fighting for about 16 years professionally. Stipe has been a professional fighter for about 14 years.
Aspinall has been in the ufc since 2020. Jones has been fighting in the UFC since 2008. Stipe has been fighting in the UFC since 2011. There is no comparison, jones and stipe have been fighting in the UFC for more than a decade. The UFC is not BAMMA fights, it is one of the toughest orgs to compete in.
