I don't see your point. We've had guys go from HW to MW (Cannonier), or MW to HW (Jake Collier). LHW to HW (DC, Almeida), HW to LHW (Krylov).
It's factually true that a majority UFC HWs would be at LHW, or at least within 10-15 bs of it, if they were at a WW/MW/LHW kind of body fat percentage.
This "wow, it's the toughest, 60 lb jump" therefore is just you being dramatic.
You count the weight cut to 205 and compare it with the cage weight at HW, ignoring that a LHW often rehydrates 20-27 lbs.
Stipe for example competes between 235 lbs and 250 lbs on fight night at HW, Pereira and Rakic are 230 lbs+ at LHW.
