**** How do you like your steak? ****

Yeah baby! That's how I do it. For the longest time though I neglected to leave the steaks out prior to cooking to let them get to room temp first.

Except that really doesn't do jack shit for the cooking of the steak.

Letting a cold piece of meat sit at room temp for one hour won't really change the temperature of the steak overall. It's a waste of time.

I thought the same for a long time. The only time I leave it on the counter is the time it takes to add the salt/pepper/other spices. Otherwise you can take it straight from fridge and have it be great.

Just did it tonight, and it was awesome.

I always wondered this because it doesn't take cold water any longer to start boiling than it does hot water. Figured it might be the same deal.

hot water boils faster cuz of basic thermodynamics. the closer the substance is to its boiling pt, the faster it takes to boil when given the same input of energy

counter-intuitively, boiling water freezes quicker than cold water due to unique properties of increase in surface area

Except, as numerous experiments have shown, it has no affect on internal temperature. Leaving a steak out for 20-30 minutes will literally change the temp 1-2 degrees fahrenheit at most, if at all, and that's it. That has no affect on being "stone cold" or room temp, and I challenge you to leave a steak out for one hour, measuring at 5 or 10 minute intervals. Check back with the results.



Can you imagine going to a steakhouse where they keep meat out of the fridge for 30 mins to 1 hour prior to cooking? They'd fail inspections! Why do it at home? Because Bobby Flay said so? Steakhouses go into their fridge, grab the steak and cook it for you. If not the fridge, then the chiller right next to the grill.

I usually order mine and say 'between rare and med-rare'
I had a wagyu flat iron like that last week, fantastic.
