Actually I stumbled across a video of an amazing chef who does them like that, but fast, it was what I think he was imitating

I recall it. That was still very odd, but that guy was clearly very experienced as a sous chef of some sort.
 
Restaurants are not an easy racket to make money at. Hope he surrounds himself with good people for it, it’s an easy way to piss away money

Even great restaurants close. It's easy to say, prices must be 4 times your food cost, but between exorbitant rents, food waste, high payroll costs, all of the supplies, etc, it's tough. The ones who do well, typically broaden their market saturation with multiple locations or multiple businesses (or both).

These references DO wear out their welcomes. On the youtube channel "pantheon level cluelessness" which has probably 100 Tito clips, EVERY SINGLE VIDEO has these Tito quotes in some form or another. It's like this board but on steroids because it's just a comment section, not a discussion forum, so everyone is clamoring to make the same comment (while ignoring everyone else's similar comment and hoping for 10k likes so they can edit their post and thank everyone for the likes, as if that goes on your resume).
