The difference between the behaviour of "whites" and "non-whites" is that it is the "whites" that are responsible for applying most of the negative stereotypes towards other whites.
While there were certainly some black people who went along and behaved towards other blacks in a racist manner (largely being pressured into doing so, by the majority), they were never the primary cause behind it. In the case of whites, it is not latinos or blacks or Asians, for the most part, mischaracterizing the "white" identity group, it is the white people themselves.
That's not a difference. It's the white who are responsible for applying most of the negative stereotypes towards non-whites as well.
The ability of the negative stereotypes to gain traction arises from the amount of non-white people who will agree, rightly or wrongly, with those stereotypes. When the amount of non-white people are small, there is little positive reinforcement to the stereotypes. When the amount is large, the amount of reinforcement grows. But it still requires the majority population's participation to apply them.
White Americans aren't stereotyping "whites" any differently than non-whites have done in the past, they simply have the numbers to make those stereotypes stick. You need large numbers of people in agreement for the stereotypes to have an audience but you also need a dominant population group to spread the stereotypes. So, it's something of a feedback loop.
It's part of why black America can't fight it's negative stereotypes - they lack the cultural dominance to broadcast a counter message effectively. No matter how many people might say that the stereotypes are inaccurate, if you can't spread your message effectively it doesn't matter.
And in this sense, whites stereotyping other whites isn't a divergence. They decide the stereotypes of the various groups and they broadcast them. It's their cultural position that allows their choice of stereotypes to stick to everyone, white, black, Asian, etc.
