Gotta salt and pepper the meat ball and smash at exactly right moment. We make a horseradish based burger sauce too.Use a cast iron that's hot, smash the burger and already have some thin sliced onion under the meat, then continue like normal, it's really good like that .

You know how when you sear a steak you get that delicious golden brown crust? That's because of the Maillard reaction, which is a chemical reaction that occurs when you heat up amino acids (proteins) and sugars, like those found in meat, bread, et cetera. It's why you cook a steak on a grill or flat top instead of boiling or microwaving it.
A smash burger is a burger that's smashed flat on the griddle in order to greatly increase the surface area of the patty, which in turn greatly increases the amount of golden brown deliciousness. The idea is that the outside of a cooked burger is the tastiest part because of that Maillard reaction, so with a smash burger the whole patty is carmelized instead of just the outside. And you would typically put at least two patties on the bun.
They're very tasty. I don't know if I'd say they're better or worse than a normal pub-style burger, but they're definitely a great alternative.
