Another one...smash burgers

You don't have to do a smash burger with the onions or any toppings. My kids love them with just cheese. It's not a difficult concept - it's a thin burger that will be more crispy on the outside. People for some reason think they'll be dry since they are smashed, but you are doing it in a cast iron or flat top and they are cooking in their own juices.
 
You know how when you sear a steak you get that delicious golden brown crust? That's because of the Maillard reaction, which is a chemical reaction that occurs when you heat up amino acids (proteins) and sugars, like those found in meat, bread, et cetera. It's why you cook a steak on a grill or flat top instead of boiling or microwaving it.

A smash burger is a burger that's smashed flat on the griddle in order to greatly increase the surface area of the patty, which in turn greatly increases the amount of golden brown deliciousness. The idea is that the outside of a cooked burger is the tastiest part because of that Maillard reaction, so with a smash burger the whole patty is carmelized instead of just the outside. And you would typically put at least two patties on the bun.

They're very tasty. I don't know if I'd say they're better or worse than a normal pub-style burger, but they're definitely a great alternative.
