whole wheat pancakes

I've found/came up with a few good pancake recipes that are as good for you as you can get, given that it's panCAKES we're dealing with.

Eggs, cottage cheese, almond meal, and some almond milk to thin the mix, is probably as close to healthy as you can get in the "cake" category. They don't cook up the same as a normal pancake, but pretty close, and they taste great. Depending on what I have in the house and what taste I want, sometimes I'll use wheat germ rather than the cottage cheese.

The classic "bodybuilder pancake" is just eggs, cottage cheese, and oats with a scoop of whey. Those are very tasty as well.

Here's the way (mostly) as we made it (for 10 3" diameter cakes).

3 eggs
3 tbs butter
3 tbs whole milk
1.5 tsp honey
1/4 teaspoon sea salt
4 table spoons coconut flour
2-3tbs shaved coconut
Splash of vanilla
Water until they're a more pancake-esque consistency

then fried em up in cocnut oil over medium-low heat.
They're a little denser and drey than normal pancakes but REALLY good, especially with fruit on them.

You should try playing around with vanilla whey in this and see how they come out. You know, so the rest of us don't have to ourselves...

But then what would I use as creamer in my coffee to go along with them?

[Edit:] and for what it's worth my wife (who can't cook but has been baking a lot) has been messing around with flourless cookies as well as crepes (not so much the delicate French kind, but the more Vietnamese inspired types that should hold up well with some vegetables and bison liver in them). So I'll post them up when they don't suck.
 
Mostly because it is. Don't feel bad, you're not the first and you won't be the last to fall for the whole grain trap. In reality, the difference between whole wheat flour and white flour is minimal. Sorry.

Alongside this post, I was wondering if someone could point me towards the right FAQ for 'DO NOT EAT FUCKING BREAD'.

I am sure I know some of the reasons, but I would like to get everything compiled and smashed into my brain so I hate eating bread if it's getting this much piss on it's face.

Whey protein as creamer in coffee... why didn't I think of this sooner!?
 
I've been looking more at total daily macronutrients than the actual food type lately. It just offers me some flexibility in what im able to eat. Keep in mind im still eating whole foods eventhough sometimes I have corn on the cob or a bit of whole grains here and there.
 
whey protein powder in coffee is a cool idea but does the heat of the coffee denature or alter the protein?
 
Almond Meal is also a great substitute for whole grain flower. Pecan Meal works too.
 
heres my idea of an awesome breakfast:

whey shake (around 25 g protein). if you're really hungry add a 1/4 cup dry unsalted peanuts.

wait 30-60 minutes, then eat a banana.

good to go.
 
Heat denatures protein by unfolding the tertiary/quaternary structure of the protein molecule. The amino acid profile stays the same so I wouldn't worry. Carbohydrates are different from proteins and I have no idea how a carb can change into a protein because carbohydrates lack Nitrogen and and N is essential in amino acids. I believe you heard wrong DP.
