You're referring to plot twists and trying to weasel your way out of ... god only knows what or why.

But to be sure surprises can occur without being plot twists or even plot-oriented because, knowing you, audiences can be surprised by anything -- even what is plainly obvious to others. Cameo casting is a huge source of such unscripted surprises.

Saw (Although Saw 2's twists were better)

Scream (Scream 4's twist could be even better than Scream 1's. I'd have to watch both back-to-back to make that call.)

And Usual Suspects. That twist may have been so good, it started the ball rolling with Hollywood developing great twists, and The 6th Sense REALLY made it mainstream.

The 6th Sense's twist is very good, but I can't make a judgement on it because it was spoiled for me before I saw it.

Shutter Island's and Secret Window's twists were so obvious I figured them out halfway through.

The Village's twist was so facepalmingly bad, it should have been on your poll.

I might be in the minority here but the end of The Village caught me completely off guard

I was surprised at how many people were surprised by the usual Suspects. I mean it was a great movie and the twist was good and all, but I wasn't really caught off guard. Once Brynes character went down I guessed correct. I did like the setup though.

I guessed it the second Virgil started talking about the mysterious Turk who everyone was afraid of.

1995 was an interesting year for movies.

Kevin Spacey wasn't yet a household name, and movies with twist endings were much more rare.

Yeah, watching it 10 years later, or 20, or 23, the twist is now easy to figure out. But it was pretty shocking then.
 
Going by the well established tradition of plot twists (being set up and different from surprises ie “Luke I am your father”).
It’s probably 6th sense.
Although that is not my favorite
Oldboy is great although the twist is not one of my favorite parts of the movie.

The first season of AHS with the daughter was pretty good though predictable if familiar with the genres trooes but it is one of my favorites of its kind

I did not particularly care for the Departed.

Some other twists I found via Google were Matt Damon's character being a closeted homosexual along with the extra mole in the crew and in the police force. Another way Leo's character getting the gf pregnant

That’s a nice selection. I also thought Along Came a Spider had one of the best plot twists.
