On your advice I do 50/50 butter/oil. The cooking of that is the key. You can't rush it. Stir constantly until it gets a good brown hue. Equal parts oil/butter and flour for the newbies.

Nah, regular roux with fat and flour. I do it in the microwave now, but basically after everything is stirred thoroughly I nuke it for 3-4 mins the first session. Then 30 sec to 1 min increments after that, checking color and stirring each time. Makes it super easy to get a dark roux.
