Radagon is harder than the Elden Beast. To me anyway. Way harder. Elden Beast just runs away constantly. Radagon stays on top of you with big, fast hits.I've reached Radagon at level 98. I've tried against him a couple of times. I'm confident I can beat him. But him and the elden beast is gonna be very tough.
My list would have the same for top two but her name is Malenia – not Melania, which you're understandably probably mixing up with grace mommy Melina. I found Gaius and PK not difficult. I got my butt kicked proper rather by Godskin Duo and Fire Giant! For me, ugly fights performance-wise and hard-fought wins.For me the hardest bosses of Elden Ring in order
Bayle (first time I fought him he seemed super aggressive and unbeatable. Every other time I fought him he just walked around and did almost nothing)

It sounds like maybe you need to do more exploring before fighting some of those bosses. I'd go through Limgrave, the southern island and the underground section before even going to Stormveil Castle personally and it's not as bad. And you could even take the path that goes around Stormveil first and get some items/weapons/experience there too.Round 2....
First round didn't go so well, as I picked the Warrior, thinking it was the most basic of builds. It was not. It's basically an "Assassin" build, which proved to be a bit too advanced for me. Ain't no way I'd get through this fucker dual wielding and roll dodging every attack. Beat Margit(which was not easy) and made it pretty far into the castle, but was already burned out trying to stay alive in damn near every single encounter. A simple beefed up normal enemy would give me fits, and they're around every corner in this game.
Reboot! Went with the...Vanguard(?), got my sword and board skills working, and it feels a lot more balanced on my end already. Just started out, beat a few dungeons and got the maiden. On that point, hiding the maiden at a random bonfire was just fucking stupid. I had to look that shit up on my first run. Completely unnecessary and there are no hints to even begin to give you an idea of where she is. Kind of important being able to level up in this game. Anyways...I'm still 50/50 on the game. Most complaints are personal, and not a critique of the game itself, but does every single enemy need to have delayed attacks? Does every boss need to have never ending death combos you gotta wait out, just to get one hit in? Does damn near every mob need to have some supreme knight leading them(I guess that makes sense, but still). It's one tough motherfucker, and I don't know if I like the direction Fromsoft is headed. Gonna skill check people like me out of even attempting to play their games.
That said, sword and board is doing better than my naked Warrior, so we'll see. If I can beat Margit without sacrificing 16 goats to the gods in my backyard, I'll come around.

I like the first Radahn fight quite a bit. I have to do it solo though, I feel like it’s harder with summons. He gets even more unpredictable.
