Khabib would be constantly scaring them into the moat. Lets be real, the reason he can use the cage is because they are constantly backpedaling to avoid the takedown. Add a moat and now you just have his opponents drowning.I think the point is that a cage/wall is an arbitrary construct vs using something like a moat around the octagon.
The moat would be an equally effective barrier and would not change the outcome of, say, a Silva-Belfort fight, however Khabib's fighting style heavily utilizes the cage and his fights would look different.
but why ? if there's no limit, theirs no fight just running. And if you put subjective rules, you ll make the fight less realistic, the fight will have to stop everytime someone cross the limit a bit like the grappling matches today etc.
Go watch Sanda fights or taekewendo if you are interested in fight without cage or ring. it is much much less entertaining than MMA or Muay thai because fighters just avoid confrontation every time. ( how can you blame them, if there's no barrier ... )

The fighting would not be that much less realistic. The octagon environment isn't too realistic either. In real life your environment can be anything of an extreme variety of things.
I like Sanda and Taekwondo too, but obviously those are different sports.
