Omelet: I'm half embarrassed to be bragging about an omelet- even anonymously- but it's probably my best.

Personally, omelet this one slide as a well made omelet takes practice IMO. I almost listed it as an "everyone should know how to make" dish but it takes a bit of technique and and know how to do it right.

Google omelet and look at the images and you see a bunch of this kind of garbage or other monstrosities;

Peruvian green spaghetti.

The green comes from a mix of basil, spinach and a shitload of queso fresco and some evaporated milk. Comes out creamy as hell.

Lots of fat = lots of flavor.
Isn't it awkward to cut up on top of the spaghetti?
 
Ok so what does a good omelette look like?

It's not burnt like both of those.

The veg elements is pre sautéed (IMO) so you don't have raw green pepper, onion and such that hasn't seen any heat other than the minimal amount it receives in the center of your eggs.

You don't just scramble the vegetables in with the egg like the second one.

You flip your circle before adding your filling which prevents that burnt outside, undercooked inside.

And personally, I think you roll instead of fold. So something close to this;

Just my opinion, but burnt eggs are the worst and raw crunchy veg in omelettes aren't as good as lightly sautéed veg. Plus, your cheese will melt more if you flip the circle and add it after the flip. Unless you're just overcooking the shit out of the whole thing which results in burnt eggs.

1. scallop risotto- very simple dish which is very rich and creamy. only thing is u just gotta keep stirring and standing around the stove for like half an hr

2. herb crusted rack of lamb- full of flavor and has that wow factor. after searing, it takes about 15-20 mins in the oven b4 adding the english mustard and herb crust (bread crumbs, parsley, parmesean)

3. ribeye steak- super easy/lazy recipe for me. just searing on all sides and letting it rest accordingly (about 1/2 time it takes to sear). never with ketchup u heathens

4. jambalaya- usually cooks for a whole mess of ppl in a big pot.

stole this dudes recipe but instead of pork fat, i use butter and make a roux as my base. i also use pork sausages, bacon, large prawns, and minced beef/pork. veggies i use bell peppers, some chili peppers, onions, tomatoes. seasoning i use salt, pepper, onion powder, garlic powder, & most important smoked paprika



5. lobster spaghetti-super easy to make. just takes some prep work. coursely chop parsley, basil, & green onions. minced garlic and chili into my tomato sauce. absolutely delicious

Jesus those do look beautiful and glorious, but I'm pretty satisfied with my shitty omlettes. Enough so that I would be putting much effort into learning your technique of the gods.
 
Desserts!!!

1. strawberry or vanilla souffle- honestly when i 1st made it, i was expecting some amazing decadent dessert to blow me away. honeslty souffles r not really my thing. its light, fluffy, but really not that amazing in taste. the only thing is the technical aspect of it and the wow factor u make for ur guests when u present a perfectly bulged souffle. kinda tastes like a fluffy egg pudding

2. panna cotta with a berry cooli- super easy and pretty sweet/tasty. u just mix cream, milk, sugar, gelatin, and a splash of rum in a ramekin mold and let it set b4 making ur berry sauce and chocolate garnish

3. sticky toffee pudding- somewat procedural. even now i still gotta follow my written recipe in making it. amazingly sweet and decadent. feel like im gonna get diabetes everytime i eat it. very comfort food level dessert. its actually so sweet that i dont serve it with ice cream

4. american apple pie- very classic. amazingly simple. lattice puff pastry around carmelized apples. very delicious

5. peach melba- one of my all time fave desserts. also super simple. poach deseeded/peeled peach halves in sugar water until soft and serve with a raspberry compote and vanilla ice cream

I see a lot of "properly cooked steak" but no one detailing what cuts or technique they use. Everyone thinks theyre good at cooking steak

Totally agree. Nobody knows how to properly cook an omelette or even scramble eggs I feel like. They're always overcooked and just taste like burnt farts. I prefer a plain old French omelette. Simple but incredible if done right.
