This is a relevant video. Whole thing is worth watching, but start at 4:20 for talk about a Hulk solo film.They didn't want the hulk in this movie that much is clear. Why? I don't know. My hope is they are preparing to have Hulk go through some sort of transformation that will make him more powerful than ever. I'm also wondering if the change will include some sort of color\speech change as in he can talk normal now and have full control.
In the comics Hulk had various colors\personalities so only makes since that the MCU takes advantage of this and implements it into the story somehow. The change could also coincide with changing the character enough to release a better solo movie for him after A4.

According to the Russo's themselves, Thanos would have beaten Hulk even without the Power Stone.
The way to beat Hulk is not a long drawn out fight. Unless you are really holding back and have a power level well beyond what you are fighting Hulk at the start of the fight with, he will only get stronger and beyond your ability to beat him. The Hulk Buster armor only won because he had the ability too drop an entire building on him and then coldcock him while dazed. Otherwise Hulk was beyond that armors power.
Thanos without the Power Stone would have to be super tactical and go for the kill shots early or Hulk would out power him.
You know about how Marvel almost went bankrupt in the 90's and sold the films rights to most of their popular characters right? Spider-man to Sony, X-Men and Fantastic Four to Fox etc. Hulk went to Universal, and they made the 2003 Ang Lee Hulk movie. The thing I think I can respect on that part is they seemed to convey that Banner was starting to take back over (that is, Wanda's mind control may have been starting to wear off) as you can see Hulk start to look really empathetic and concerned as he sees the people staring at him in fear and cowering and fleeing. Then just before he starts to rage again, Stark levels him. The shots you don't see coming are the worst (Anderson vs. Weidman- is normal).
That said, having re-watched Age of Ultron fairly recently, I was struck by how the fight was pretty lopsided in Stark/Hulkbuster's favor. Hulk gets the moment where he is ground and pounding the shit out of HUlkbuster and does some damage, but Stark quickly reverses it with a big punch that sends Hulk flying. Additionally, a lot of Hulk's attacks are reversed- he gets his momentum used against him, he gets tossed, launched, etc. That was a clearcut 10-9 of a round before the KO.
