Day one of shooting.
It's a smart move but it's also an indication that Marvel Studios' heyday is over (for now?) and they can't just rely on putting anything on the first week of May and have people show up. With the December move, they're trying to hedge their success rate by combining it with the Christmas holiday which is very good at the box office. This is a smart move

Does this give them more time for Cavill to play Doom?
Yes, the Avatar movies were December releases. The new Star Wars trilogy, Rogue One, Spider-Man: No Way Home and Aquaman were also released near Christmas and all earned $1 billion at the box office globally.I don't know if I agree with the heyday part. I think they are suffering from past decisions including railroading their biggest properties. This gives them time to make a better set of movies, imo. Fits with their current strategy of focusing on quality.
You're likely very right about the date. Wasn't Avatar a December release?

What? No way. I'm looking forward to X-Men movies. After the 2 avengers films many people will feel like there is nothing more to look forward in the MCU.

Nah... MaybeWhat do you think? Is Thor going to die in Avengers: Doomsday?
