Like many things there is a degree of showmanship in MMA.
As everyone has been saying for a while, what you need to do is take some acting classes, then just every fight repeatedly poke your opponents in the eyes, punch the back of the head, grab the cage etc. and just act like you can't hear the ref when he says things like "Watch the fingers!" "Watch the back of the head!" and so on. If he stops the fight (for a while) at first act really surprised, like you don't know why the fight has been stopped. Then when it's explained to you act surprised, then like oh - I get it - then really contrite, do the prayer hands and bow to your opponent, extend out the hand for the fist bump etc. Then wait a short time and do it again.
When you kick your opponent straight in the balls with maximum force probably better not to pretend you don't know you did it, instead seem really frustrated and angry with yourself for your inaccuracy, then do the contrite act.
On the other hand any time your opponent even touches your face with a finger or knees anywhere near the groin etc. you need to be acting really bothered and hurt and appealing to the referee both verbally and by body language and gestures. Omg I can't see, omg this is so painful, omg I'm so rocked I don't know where I am due to that punch vaguely near the back of the head etc.
When on your back your strategy is just to hold your opponent to make it as difficult as possible for him to achieve anything. Make the fight as boring as possible, so the crowd start booing and the ref feels pressured to stand you up. On top however your priority is to maintain position, while doing just enough pitter-patter striking for the ref not to intervene. Make the strikes look as big-arc and hurtful as possible even though they are doing nothing. Let your opponent regain half-guard then pass it again, grab his arm and pretend to be working on a choke for a while then go back to striking etc.
