Aljo didn't want to take any chances at all, and Kattar clearly didn't want to be there. And if Aljo is as talented as you make out, how come he couldn't even come close to finishing a boxer with shit-tier grappling? They were hailing him as some GOAT back-taker, but he couldn't do any of that against a dude from a boxing gym full of crap wrestlers.
If you find a fight like Aljo/Kattar more entertaining just because one of them is more talented then another, then that's cool, I guess. I find the dynamic of a match-up more entertaining, personally. One guy who doesn't want to take chances and only wrestle vs a guy who doesn't want to be there and can't wrestle doesn't do much for me lol.
By your logic though, Big Frank/Lewis was more entertaining than any WMMA fight ever because they're both better strikers than anyone in WMMA, yet nothing happened in that fight.
