Why did Anderson turn into such a jerk in the Maia, Côté fights?

Yeah, engage a superior counter striker because you're the challenger.
yeah, ultimately the burden falls on the challenger. If he does nothing then the champ is free to do nothing and keep the belt.

edit: it's also clear maia realized this since he started putting combos together later on.
 
Because they were just standing around and not playing into his game. And "Mocking and belittling" is a bit of an overstatement he was just trying to get them to do something so he could counter.

I took a time to read through all the comments. I can't believe that there is no one on this forum that knows the era when Anderson ruled the world (only 10 years ago).
The answer to your question is simple. When Anderson was too dominant in his weight class and was disposing of contenders left and right, he was looking for the ultimate challenge to become mma god. He wanted GSP. Particularly in the period when he fought Maia, he demanded constantly to fight GSP at catch weight 178 pounds. GSP would never oblige and Dana would never force GSP to make that fight happen. Anderson was so pissed of that the fight was not happening, he did the Maia and Cote fights(stalling, winning with minimal effort) which infuriated the fans and Dana. The fans were booing those two fights and Dana was very pissed.
Not only that, but Anderson was so arrogant at that period, that he used to publicly grease. He used the vaseline from his face to grease his chest at the opening of round1, there are gifs of that around the net. He was the most dominant champion up to that point and he was forcing Dana to make the super fight with George. George who was super scared to lose again, never agreed to fight Anderson. Anderson greased and stalled these 2 fights to put some weight on Dana, but it was all in vein. Dana threatened to cut him if he continued to fight like this. The most dominant champion in the ufc history couldn't get his superfight and continued to dominate the next fights as usual. He found challenge at LHW, where he had extraordinary performance, having had perfect fight with the LHW champion.

May be he didn’t finish Maia because it was too much risk. Anderson said he felt Maia’s power. He also did this smoke and mirror tactic with Okami and Weidman. Unfortunately Weidman called his bluff. Basically all that antics were just psychological warfare to save himself from injuries and risking the belt
 
He always was, but when he couldn’t have his way in the cage and destroy his opponent he couldn’t even fake it anymore. He tried the same shit with Weidman. Called out sonnen for failing a drug test and literally said if you are caught cheating, you’ve always been cheating and you can’t be given the benefit of the doubt. Then he went and failed three tests himself. He wasn’t being disrespectful, he was being himself.

I don’t recall this. If you have an example, please show. As a matter of fact Demian was and is still good friends with the NOG brothers, and there was never any issues between them.

He’s a counter striker. He needs you to engage for his offense to be most effective. If you won’t engage, he tries to taunt you into it.
