whats the point of interval training for fighting?

surely there'd be a point where the contractions would stop entriely (I'm sure other things would give up/the brain would make the pain so unbearable by that point to prevent damage)

Yeah...metabolic. Changes in pH level from the Lactic acid would eff up your muscle contractions. Enzymes and metabolic reactions have an optimum pH level in which they function. The more you train, the more you are able to adapt to this.
