Couture vs. Liddell 1. He totally beat Chuck at his own game. Conventional thinking was he'd have to outwrestle him, but he surprised everyone by outstriking him.

Not UFC, but what Ryo Chonan did to Anderson in PRIDE. The striking before the leg scissors into inverted heel hook was pretty much even.

GSP vs Jon Fitch iss probably the most uneven fight between the Champion vs The consensus #1 Contender I've seen in my life. GSP just beat the fuck out of Jon Fitch, for 5 rounds. Almost everything Jon Fitch tried ended with a GSP's punch in his face.

Every fight involving Cody, Cruz and Dillasnake. They are the kryptonite for each other lol

Lawler vs McDonald 2 is the best fight I've seen in my life, and it's the Mona Lisa of both Rory and Robbie.

Yep. One of the most masterful displays. To me, masterful performances excludes fights that lasted a minute or so, if that makes sense.

Fights where skill was displayed and abilities at their utmost fruition:

dillashaw/barao
Machida/rashad
Conor/Alvarez
Silva/Forrest
Adesanya/Costa

there are probably many more but those come to mind immediately.
 
Rashad looked scary good against Phil Davis
Sure did. That’s why when people call him and Glover ‘over the Hill‘ by time they fought Jones, you know they didn’t follow MMA back then. Rashad manhandled Phil and brought Tito‘s career resurgence To a halt emphatically. No doubt that was the best version/run of rashad’s career. He’s one of the very few who I thought could pose problems to jones.

Brenneman vs Story

Excellent answer. Story was on a six UFC fights winning streaks (including over Hendricks and Thiago Alves), while nobody cared about Brenneman who took the fight on a few hours' notice after Marquardt pulled-out. Huge upset that lead to Brenneman getting mauled by Anthony Johnson in his next fight.
