Yes, stuffed shells! My sister-in-law is Italian (immigrant) and she spends about two hours boiling down the sauce for her stuffed shells and it's just ridiculous.
She also make ravioli that's unbelievable. She has a little contraption that attaches to the counter that flattens the dough for the pasta. The first time I had it I stopped chewing and looked at my plate wondering how the fk she made it so good.
That said, a good ol plate of spaghetti and meatballs is hard to beat. Especially made by her (again, two hour sauce and hand made spaghetti).
