last year we went to one of those "5 course dinners" by a professional chef.

there was the salad dish, appetizers, steak for main course and decadent dessert.

the appetizer was this vegan, egg plant dish.

if you were to tell me prior to our dining experience that the most delicoius dish would have been the Vegan one I would have called you a fu*king liar to your face.

what dishes have you made so far?

Cashew fig melts, creamy cauliflower potato soup, crispy carrot dumplings, spinach and artichoke grilled cheese, kimchi fried rice, etc. A lot of really good meals.

I’ve been really impressed. We actually just made and ate the carrot dumplings, that’s why it took a while to respond. It almost seems like more effort is put into the flavors with the vegan meals since you can’t fall back on basics like cheese and meat.

exactly...I think that's why Indians (the subcontinent variety) have great success with vegan/vegetarians dishes...

because of their spices and seasonings
