Admittedly I do like my BBQ saucy. So Texas actually wouldn't be my go to. However, I have heard amazing things about Texan brisket and beef in general and I think I would love it. Keep in mind I from Toronto though, so my opinion about anything BBQ should be discarded and thrown in the garbage.

Here's the thing about Texas BBQ, it doesn't NEED sauce, not that people don't eat it with sauce.

A well prepared cut of meat should stand on its own sauce aside, but that's independent from personal opinions on saucing. But if you come down here, your meat will be served dry because we cook it right. But if you wanna sauce it up post hoc, nobody is gonna look at you funny.

People use sauce as a crutch for not cooking their beef correctly and that's just not gonna sit right with Texas, pard'ner.

The more I think about it the more lazy I want to be and I'll separate the muslce groups but just use the drippings or something from the cooking process to mix the point around in before trying to crisp them up.

You guys are essentially the @Sketch of meat. I like it.

In all seriousness I've heard that about you guys, the meat and dry rub is just good on it's own it doesn't even need a sauce.

One thing that has me wanting to cut the point away from the flat is how I prefer to not have that layer of fat between them if you slice the whole thing as one unit plus then the flat loses a ton of seasoning on that end of the muscle group
