Its not stipes age, most of the reason why he looked slow is cause he was fighting jon Jones. Harder to look fast and get off shots on a guy with rhat much reach advantage and whos great at keeping distance while punishing guys. If Stipe fought someone like Derrick lewis instead he would have looked faster and much better. Hard to look fast when you're fighting Jon Jones and a calculated and stamina ready Francis Ngannou.

That is a factor too, but I rewatched the fight, first minute he looked fine, but he ate 3 very hard liver/body kicks in that first minute.

And third kick really hurt him, and it happened at 55s of the fight, very early. You could see that he reacted right away by attacking, pressing, because he felt urgency. He always does that when he is hurt, as a defense. Then GNP did not help either.
These things are hard to judge, props to Jones for sure. But he should not have belt at all at HW. HW raning and title fights were messy.

You could compare it to Reem vs Brock fight, how Brock was slow after knees to the body.

This is the narrative that Jon Jones fans want to avoid. There are two possibilities: 1) Stipe was in "vintage form" and looked great, and Jon Jones was just that much better, or 2) Stipe and Jon both looked old, slow, and washed up.

You can see the appeal for the Jones fans to be delusional and hype up Stipe's performance.

I've seen him being in 'great shape' mentioned a lot. Looking aesthetically in shape doesn't mean you're ready to go 5 rounds with an elite fighter (let alone the best to ever do it).

He looked slow and sluggish from the beginning. Not training for a fight for years, he's clearly lost his speed and reflexes. He might have just been as slow if he had been training all that time considering his age.
