I may have to look up some fan made ones without the fillers. Naruto has some good ones so I'm sure One Piece has one for sure. It's the last of the big anime's that I have yet to watch, but it's also a huge commitment. Probably more so than Naruto Shippuden and Bleach combined.

If I find something I'll give you a heads up. I know for Naruto there have been several fan made ones. I watched Naruto Kai a couple years ago, but I think the most current and best one is Rebuild of Naruto. They even have a discord and you can just download all the episodes. Since One Piece may have even a bigger fan base I'm guessing there is a good one out there hopefully.
Bleach is easier to watch than OP. Early parts of it feels really dated though. You can skip all the filler and the last arc then jump into the new finale for the series.
Yea it also seems like more of my type of show but I just never watched it. My cousin would always beg me to start it, he was a massive fan.
My older cousin would always talk about Bleach too lol. He was a huge fan as well and his favorite anime till this day. Bleach isn't too much to get through. I watched all the episodes, but I'm sure you can exclude all the filler and non-canon episodes and be fine. Just eliminating The Bount arc is a crap load of episodes alone. If I remember correctly only 200 episodes out of like the 360ish are canon. Worth the watch for sure, but I would wait until it gets closer to the last season of the thousand-year blood war arc is released. That way you can watch the entire series in one go. I don't think the last season will come out until next winter though.
You can guess what the bleach fillers are. It goes from a cliff hanger of a major arc to another story that has nothing to do with it. You can speed run bleach if you really want to. The new bleach finale is fun because it is all fan service.
Just skip bount arc.
