The way they are setup, Zuffa doesn't guarantee you anything. They can sign you for 7 fights, and cut you apropos of nothing after the first fight and offer no compensation. Why on earth would Stipe be required to perform his end of the deal, and the UFC isn't required to do the same?
Law professors have called the UFC promotional contract, which were made public pursuant to litigation, "the worst they've ever seen." They are completely one sided and some argue not even enforceable as written, if people had the resources to challenge them.
So the current setup is the UFC can cut you without cause at any time, and the counterpart to that is you can't compel fighters to fight.
Not fighting is Stipe's right and he's wise to advocate for himself. His only duty is to himself and his family. The UFC literally kicked Georges St. Pierre on his way out the door - we are talking a years long company man who rained tens of millions of dollars for them. You will most definitely be treated as a disposable resource.
It blows my mind people don't support the fighters.
So everything you have said about the UFC contracts is true.. They are one sided but the fighters still sign those contracts and are bound by them.. it is their option not to fight but if they do it is for what they signed for.
I am all for the fighters getting whatever they can but you put no responsibility on the fighter for signing a bad contract.

I do understand lightweight guys complaining that they don't make as much as the lower ranked Sage, but this is Overeem we're talking about. He's done it all and has been around forever.
I understand UFC fighters are underpaid, but ironically from this boycott they are making less interest in MMA, less money coming in. WME is an a hard situation to payback their debt and doesn't have the cash to throw at all the fighters. The sport can't be a fight once a year and make a million dollars and still remain sustainable. Look at boxing for a mature combat sport to get an idea of what reasonable wages are. The lower guys there don't get paid. GGG is only worth 6 million despite 37 fights, undefeated, and one of the better fighters.
