All of this pasta talk has gotten me excited to make some Italian this week. Any recipes for a good marinara sauce? Now that the weather is warming up we are starting to get a lot of fresh produce around these parts. I better get while the getting is good! But you already know that.

All of this pasta talk has gotten me excited to make some Italian this week. Any recipes for a good marinara sauce? Now that the weather is warming up we are starting to get a lot of fresh produce around these parts. I better get while the getting is good! But you already know that.

Marinara means something else in America... You basically make a tomato sauce and call it a Marinara... An actual Marinara sauce - on a low heat, fry chopped capers and garlic starting off in cold oil until you start to smell the garlic - you're infusing the oil, not trying to colour the garlic... Just before the garlic starts to colour add your tomatoes, crank the heat for about 30 seconds and give it a good stir, then once you have a nice bubble going through it turn it down to a slow simmer, add a big pinch of oregano, sea salt and ground pepper, and cook for a good hour stirring every so often... If you're worried about it going dry then add half a glass of water and that should cook out nicely... don't put a lid on it, and always put your pasta into the sauce, never pour your sauce over the pasta or it will never mix properly.

Puttaneasca sauce is the same principle as the Marinara but you also add chopped black olives and anchovies to the oil at the start... It's the famous sauce the hoovers of nap less would eat to cleanse the taste of the nights endeavors from their pallette. Strong as fuck but awesome if you like that kind of flavour and it's a great one to make a lady.

I had a chef that used to scream shit at me like "this is fucking Michelin star, not Eurostar you fucking prick" or the one I use to this day, which is "if cunts could fly, then you'd be leader of the fucking squadron".

Chefs are the worst after work eaters though, I can't lie. Kebabs, burgers... Nothing is too scummy or rancid after a hard nights service then drinks afterwards.

It's funny you say that. My pops used to have a barbecue restaurant. I remember how he was in the kitchen. Those were good times.
