Nothing. You haven't touched him or audibly threatened him. Legally, he has no right to do anything other than to say "back away, sir."

EDIT: You could make the argument the cop felt threatened by the gesture (keyword gesture), and decided to escalate with physical force. But, that wouldn't go over well with anyone.
