If I recall correctly before he became a fighter he was at one point a professional bull rider; plus he raises cattle. That's about as professional of a cowboy as you can be in this day and age.

Well I guess he has a small ranch and I know he used to ride bulls, so he's probably pretty authentic. I used to ride bulls, grew up in the country, rode horses etc, and many of my friends and relatives make their living as working cowboys, he seems legit to me.
He is very much into that sort of life. Rode bulls, owns a ranch with horses and livestock, etc. It isn't just a gimmick.
He owns a ranch and horses, you can see it on one of the embedded episodes before the last ufc.
