First of all, Gruyère is the king of the general purpose hard cheeses. Gouda, Cheddar (the real shit), Edam, Jack, Colby, etc, all take a back seat to Gruyere when Gruyere shows up.

Second of all, have some cheese:

But i'm not the biggest mozzarella fan.
