In Italy it doesn't have Ricotta in it, it's Bechamel. Which is a pain in the ass whisking the roux but worth it. I'm a bit iffy with Ricotta unless it's whipped, I find it a bit grainy. Cottage cheese though, my STD and your description nailed it I think.
