Student teachers are there to shadow the actual teacher to become one themselves, and they aren't middle aged men either. The guidance counselor discusses your college plans or disciplinary problems, or maybe that's where you go to file a report if you're being beaten at home, and chaplains aren't there to discuss your sex life either.
Again, where did you people go to school where these people were trying to talk about your sex life with you?

Teachers are there to discuss whatever problems the kids bring and confide in them. Obviously the kids feel discomfort talking to their parents so they see this as somewhere they may be able to get advice.
Student teachers are closer to the students age, and typically run a form class and do some relief. Obviously, kids can identify with them and talk to them. Senior teachers are known and respected, and can be a father figure to some kids. Guidance counselors are there to guide kids through all aspects of schools, including but not limited to vocational advice. It could be anger management, time management, whatever the issue may be.
Sex and sexuality, despite what conservatives think, is not always linear and logical to kids, especially during puberty.
If teachers think they can assist, a normal human being will try to give some help, wisdom, or just listen to the kids talk about their problems and let them vocalise and organise their thoughts.
If the teacher is uncomfortable, or if it's outside their professional wheel house (like medical or psychological), they would steer the kids to other professionals.
