You should try Doom Builder sometime (or rather GZDoom Builder, which is one of its more modern "branches").I would love to make levels. The new doom comes with a level editor too,but i never get around to it.
Making classic Doom levels is literally as easy as drawing on graph paper. Since the levels aren't true 3D (no floor-over-floor unless you use special techniques), all you're really doing is drawing a bunch of lines. Doom Builder is smart enough to turn closed shapes into rooms/sectors, so the workflow is a breeze. The best part is "Visual Mode" which lets you fly around your map in 3D and edit certain things (like textures, lighting, and floor/ceiling heights) on-the-fly.
I'd go as far as to argue Doom Builder is one of the best, most intuitive level editors in existence. It's even the same editor John Romero used to make Sigil!
