It's a struggle sometimes trying to find friendly foods that still scrath that itch to cheat a little.

I'm lucky that I'm on two monthly infusions and that has calmed it right down currently. Even a flare generally is mild compared to where it used to be 4 or so years ago and I could be written off for 12-14 days at a time ...

If you don't mind me asking, what medication are you on? I just started a biosimilar to Stelara and it's worked pretty decently so far. I've only had the loading dose. Due for self injections every 8 weeks.
Have you noticed a change in your trigger foods since being on your med?
KINDA GROSS READ BELOW NOT ABOUT CAULIFLOWER OR WINGS.
It's a biological under a few names. Remicade, Infleximab or Inflectra are the ones I remember, depends where the NHS (UK) sourced it from . There's another med I take it with, Azathioprine , that's several tablets daily for that.
I kept a food diary after my second attack because I knew it wasn't normal food poisoning and could never find anything as an issue, allergy tests showed up a possible allergy to lamb which is kind of funny as I hate it as a meat and last ate it about 25 years ago.
I might have eaten something and had an attack and thought ' aha!' and then eaten it again and had no further issue with the same food ...
I would have a full attack maybe every 5 or 6 months over a few years.
There doesn't seem to be any correlation between diet and attacks for me. What does seem to trigger it and the IBD nurse I speak to regularly agrees is stress .
I'm lucky in that it doesn't seem to affect me too badly currently although you know there's probably a colostomy bag and the suchlike looming in the future at some stage.
I eat normally, I don't avoid dairy etc but , as I said, the trigger for me is stress it seems, last time I had an attack ( and it was mild , despite the stomach cramps and the awful stinking diarrhea) was last year , my wife and I went on holiday and she was ill before we went and shouldn't have gone , we got home and 2 days later she was hospitalised and a day or two later I had a flare , it only lasted a couple of days rather than 10-12 days, so , much more controlled than previously and I was only using the toilet about 3 or 4 times a day and the stomach cramps were milder and I didn't have to sprint to the toilet unlike previous flares .
It's interesting how you can feel that it's an attack, in my case it's severe cramps with maybe 30 seconds to get to a toilet, diarrhea that has an awful smell to it and immodium/ loperamide does nothing to help . Not like normal food poisoning.
Kind of amusing that I carry a card that says that " can't wait , need a toilet" and by the time the person who is reading it and has reacted it's probably too late ...
Although I eat quite normally I do have to stay out of the sun , factor 50 and I tend to wear a tee shirt even in weather where the only thing other guys are wearing is a Speedo and sun lotion ... that's probably a good thing all around TBF....

I do be liking roasted cauliflower.
Cauliflower + EVOO + Jamaican jerk or Cajun seasoning + Parmesan cheese... roasted for about 35 minutes or so at 375 degrees.
