Here it is in simple terms: He embellishes Hispanic fighter names to a cringey-degree. He pronounces them normally all the time when he's talking, but when he announces he puts comedic stress on trying to sound Hispanic. It's not offensive, just cheesy. Sorry if my subjective take on it shocks you.
Again, if I didn't know or speak Spanish, or live in a Spanish speaking country with a Spanish speaking wife I may not have noticed or cared, but.... it is what it is.
