But Jones has huge fight IQ, he should be a great addition to any fighters team.

Being great at something doesn't mean you are great at coaching to do that thing. Gretzky is one of the best examples, GOAT hockey player, meh as a coach.
What Jon will become as a coach is yet to be seen. Lets see him take a regular guy and make him a really good fighter.
