First thing I normally eat when I go back to London is proper fish and chips with loads of salt and vinegar on the chips. Poutine is a close second

I had fish and chips with curry dipping sauce on your side of the pond and it was one to the better condiment experiences of my life.

Mcdonald's sweet & sour sauce is great for fries.

I used to dip them in choclate milk shakes. Was fucking amazing. I've tried several different sauces overall I always like to go back to ketchup but I do like switching it up every now and then. This burger place near me (ET) uses some sort of spicy mayo mix and it's pretty damn good. I almost always use that over the ketchup they give me. I wouldn't want to use it permanently though.

Vinegar definitely gets my vote. However, something else I like on my fries is grease that drips from my burger. I eat my burger over my fries and let the grease drip onto my fries. Tastes super awesome. lol
