It needs to be addressed that choreography doesn't make for a compelling fight sequence.
For instance there was more going on when obi wan fought Vader in new hope than any of the saber fights in the prequels.
Winter soldier had some, not much but some meat in e combat sequences between bucky and Rogers due to Rogers holding back while Bucky was going for the kill...
Civil war was awesome because it was just all around uncomfortable watching people who shouldn't be fighting each other go at it.
You made some good points but you used an absolutely terrible example when you mentioned Obi-wan and Vader (I assume you're talking old Obi-wan in A New Hope?) That scene has not aged well and it's laughable going back and watching it today. These guys are at the highest level and they look like two amateurs who have never wielded a light saber in their life.
You probably should have mentioned the lightsaber duel between Luke and Vader at the end of Return of the Jedi. Much more intense in my opinion (probably because these characters have had 3 movies so we care about them at this point) but good points you brought up. The tension definitely adds to the experience.
