It seems like something you could google pretty easily to be honest. He started his MMA career when he was 20 so I doubt he wrestled at the college level. Looking up "Josh Barnett NCAA" gave me no information about his college days so I would have to say no, he did not wrestle in the NCAA.

Yes, and i saw a karate panam champ doing armbars the other day, and since he is a panam champ he must be easily world class in BJJ.
