which fighter under utilizes some of his best weapons?

Court McGee would fare a lot better if he let his hands go earlier in fights. His end of round 2-round 3 work is some of his best. He has the conditioning to go for the full 3 rounds, but takes a while to ease in.
 
Gonzaga-bjj, especially because unlike most bjj transfers, he actually has good takedowns.

Seems to be getting back to it now, but for a while there he just wanted to brawl and he had the power to do it.
Because he headkicked and KO'ed Crocop, after that he thought he is a striker.
 
Almost every fighter who has good low kicks invariably underutilizes them.
 
I want to see Lombard use his judo. He could probably throw someone out of the ring.

Also, Cormier seems to avoid using his wrestling whenever possible. But I won't complain about that.
 
Diego Sanchez used to have such good GnP, but ever since he KO'd Riggs he started thinking of himself as a boxer. I miss the old Diego, but he is still exciting.
 
Like a few others have posted, the two that stick out in my mind the most are BJ's BJJ and Kos' wrestling.
