Who comes to mind? Thanks. I do know Matt Serra could be the all time king if he would return to fighting at his present size!
 
Joe Riggs fought as a HW, then dropped to WW...... think it would be difficult to find a bigger jump
 
KenFlo went from Middleweight to Featherweight. I'm not sure what Riggs highest weight at HW was but dropped a shit load of weight too.

Not a UFC fighter, but Doug Marshall went from out-weighing Lavar Johnson to fighting at 185.
 
Josh Haynes, who Bisping beat in the TUF finale, supposedly weighed upwards of 280 prior to joining TUF and fighting at 185.

I was going to point out that they did it opposite. I decided not to because everyone knows this already lol.
 
I could be wrong but I recall Kenflo or Anik saying that Daniel Hooker once fought at HW and he is now currently a FW
 
Yancy Medeiros is a 155'er and used to fight at 205. That's 50lbs. Pretty big jump if you ask me.
 
Overeem's had a pretty amazing weight transformation... (LHW to Superweight to HW)

So has Vitor (HW to MW)
 
Rashad Evans is worth mentioning. He could maybe make WW from HW
