100%.

I tried this. I remember Gordon Ramsay even gave a restaurant he helped with a hamburger recipe that called for this shit. I thought maybe I did it wrong, so I tried a bunch of different methods, and recipes, but there's no getting around it: it's a goddamn meatloaf on a bun minus the tomato sauce or ketchup. It's putrid. Ground beef doesn't need egg yolk as a "binder", ffs, it already has plenty of its own fat.
Not all ground beef is the same though. I buy half a steer every year and that burger needs a egg binder or it falls apart.

If you're working with 93% lean or similar compositions from self-ground butchery, then it's a defensible Macguyver patch job, but ick, if you're already grinding that beef yourself, or having the butcher do it for you, I'd sooner add beef tallow or lard than egg for binder, or even ground pork to bring up the fat ratio.
