Since we're talking steak, I recommend (for anyone not already familiar) checking out sous vide cooking. Easy to hit the right temp and then it's just a matter of putting a sear on it.
I'll give it a try sometime, I'm just concerned about searing afterwards. Maybe before is better? I don't science that, so I don't know.

I'll give it a try sometime, I'm just concerned about searing afterwards. Maybe before is better? I don't science that, so I don't know.

Searing comes at the end. With sous vide you vacuum seal the steak and whatever seasoning. Then put it in water heated to the desired temperature and wait. So the center is cooked how you like (medium rare I'll presume :) ). After that you're basically just charring the outside until you're satisfied. Most easy is a super hot pan/skillet with some butter. A minute or so on each side and bam! Perfect steak.

There's more than one sous vide gizmo out there. This came recommended by a chef and seems to work great. What's key though is to have one that not just heats, but also circulates the water. There's these chincy-ass bags you can get but those suck. Best to buy once and cry once by getting a decent vacuum sealer (if you don't already have one). Part of the cooking method is that the air is removed. As far as I know that helps keep the surrounding temperature even and enables submersion. Easy to find recipes and recommended cooking times on the web. Lots of cook books too if you're old school like me. The beauty is not only the digitally controlled cooking temp, but also the fact it's gonna be soaking in its own juices.

Yeah, eggs. Imagine an omelette in a jar. Some bacon and peas in there. Great flavor and consistency.

Biggest downside is that this isn't gonna be the quickest way to cook. But an upside is you just set the timer and walk away.

It would be super convenient to just drop a couple frozen steaks in the water and go about my day. Thanks for the info dude.
