Its the outdoor environment. The UFC has a ton of production set up that need a controlled environment. Wind, rain, etc as well as the roof in arenas being used for rigging that doesn't exist in stadiums.

No I get that of course they don’t want a King of the Cage Wet & Wild situation.

But some football stadiums do have retractable roofs right? I saw @Hellowhosthat speak about that.
