Even when they showed her walking into the building her facial expressions were saying "I REALLY don't want to be here. Can we leave, please?"
Every fighter's purpose in the UFC, regardless of weight class and gender, should be to get the damn belt. Megan Anderson made it clear when she had the opportunity to get the belt she didn't want it.
So, she was cut. She can fight in another org and not want the belt there.

Whether we call it getting 'cut' or not does not seem to matter much...the end result is the same. Although unusual to let someone go into a title fight without a new deal, it does make sense here when we consider the nature of most UFC contracts alongside the state of the 145 division.
If Anderson beat Nunes, then the 'champion clause' applies, which allows the UFC to extend her contract...so there was no particular need to re-sign her before the fight.
Beyond Nunes wanting to defend the 145 belt, there really isn't a 145 division (the UFC doesn't even have official rankings lol)...so any motivation to retain Anderson after the fight probably hinged on it being super competitive and motivating a future rematch...but Nunes murked her in two minutes.
Despite the lack of a 145 roster, I can see why they keep the 145 belt around. I assume it makes Nunes happy and helps her to 'build her brand' . It is also a useful marketing tool for the UFC and provides flexibility in finding title challengers for her since they can come at either 135 or 145.
Since it would be hard for someone to regularly defend two titles (that means 4 fights per year), for now it makes sense to just have Nunes defend at 135 and then have 145 title fights whenever a compelling challenger is found. Still, it would be nice to see them try to build a 145 roster, because Nunes won't be around forever...
