Call me what you want, but I've never seen such a thing outside professional wrestling. How does it work? What're the rules or are they the same as a traditional grappling match?

ZST is probably the most well known promotion that puts on tag team matches (both grappling and MMA). It's just a typical grappling match except you can tag out. You can win on points or by submitting both members of the opposing team.
