Well 6hrs later She hit 208F at 225-235. It was incredible like eating smoked beef butter just melted in your mouth.

I hear ya. These fools were like vultures who haven't eaten in a week when they seen me pull the two racks off the smoker lol. I wanted to let it rest for 15 mins but they were not gonna have any part of it.

With all this unrest going all over the world we need to spread love through BBQ. That love crosses all cultures man, I’m dead serious.

Damn straight. We didn't do a big thing by any means. 12 adults 6 children, but we all had a hell of a good time.
 
@DesignedFailure Those beef ribs look excellent! I'm glad you had the nerve to take them to 208° and it sounds like it worked out perfectly. I have the same problem with pics as people generally scarf down everything before I have a chance to get a pic. haha Good stuff!

I was actually surprised at 208 they still had pull and were not fall of the bone so that made me happy to see. I am glad I left the membrane acted like a bit of a heat sink and did help keep every thing together. Thanks for the tip and will be stealing that lol.
 
If I can get my ass off the sofa, I have some wagyu mince in the fridge. Going to make burgers today.
