I'll say GSP more experienced and more training in more different areas, but Jones more imaginative and has better physical gifts.
GSP is more skilled in every area.
Wrestling: Jones has fantastic takedowns and unstoppable GnP but I don't think it's surpassed Georges' yet. While Sonnen is a good wrestler Jones is much bigger than him leg wise so he'd have much more power in his td's. GSP has taken guys like Hughes and Koscheck down at will and these are some of the best wrestlers in the UFC. And when Georges takes you down, you don't get back up til the bell rings. Perhaps if Jones could through someone like Davis or Evans around he'd surpass GSP in wrestling but for now I'd argue no.

Jones isn't beating these fighters in wrestling simply because of size. Bader is the other top 5 LHW wrestler who is huge, and this was what happened:

Bonnar at 6'4" with 80 inch reach is almost identical to Jones at 6'4" with 84 inch reach: It's not the size. It's techniques.

Jones. He actually uses his skills to finish and that's much easier to sell on PPV, except for in Canada, where GSP will always be god in their eyes
I believe if Jones were shrunk down to 5'10", 170 lb with a 75 inch reach, he would get slammed on his ass by GSP and scurry his little chicken legs all around trying to get back up. That'd be after eating a few superman punch /leg kick combos and getting his lip fattened up by jabs.
I've seen all these fights. But Georges hasn't had any struggle with a takedown since maybe Hughes II. He simply slams them to the mat whenever he feels like.
