Whats your take on those 2 spicy sausages?
TBH i think spanish chorizo is superior in every instance except pizza, but pizza of course is of course the GOAT foodstuff.

You eat Migas right? Tex mex style? Covered in Cheese? Served with beans and often potatoes? Corn or Flour tortilla? I view Flour as a tex mex creation and an insult to true mexican cuisine? Am I right or wrong?
What do you view as authentic Mexican food?
i like to make spaghetti and chorizo
cook the chorizo in a pan with a few seasonings/oils until it gets the consistency of marinara, then mix in the spaghetti

Fluor tortilla is northern Mexican food, here in northern Mexico we eat both, with fluor tortillas having a more traditional aspect role in our lives.
I dont think there is a cuisine out there that can be called authentic Mexican food, since this is a country of immigrants built upon the ruins of 2 ancient empires which had trade as far as south America. So it all changes depending on the region.
Yeah I don't eat it. I never cared for pork anyhow. I always though Bacon was super overrated although Chorizo is the bomb and pork sausage is about the only other good thing of pork I can think of. Pork chops never did it for me I always compared it to an inferior version of beef steak. In general though, as I have said before land meat animals are super overrated to me with the one exception being

Other than that I could give up Chicken. Like I have said before if you eat things from the water, rivers, lakes, and the Ocean that opens up a world of millions of different creatures to eat. Scientist say like several million species in the ocean and like possibly 2 million fish. I can think of plenty of fishes and ocean animals that beat out chicken, pork, turkey etc. However, the one land animal that fish can't compare to is Cattle. A nice rare or medium rare steak is not something that can be done with creatures that dwell in the water.

Its not the meat, its the fat.
The fat in pork is far superior to the fat in cow, thats why shit like filet mignon wrapped in bacon is amazing.

Authentic Mexican food to me was always explained as follows
1) Corn tortillas over flour
2) White cheese over yellow
3) Lots of pork for meat, and lots of fish that is native to the coasts of Mexico
4) Rice with every meal
In general when I have went to Mexican resturants that label themselves as 'Authentic' this is what I find. And in general the meals seem less fattening, and are more 'lean'. In Tex Mex it is traditional to use I guess, lard, tons of cheese and heavy processed meats with everything. Tex Mex is also apparently the creator of beef Quesadillas. From what I have heard Mexican cuisine is more simple.
