Yeah my mom always had mushrooms in the fridge. We call them hongos but champiñón is probably the educated term.Mexico is the #1 producer of white button mushrooms in Latin America and averages 1kg of consumption per person in the country.
It’s not like a major staple ingredient, but people do eat them. Way more than huitlacoche, I never heard of it til I was older.

Talking of fungus, have you tried Huidlacoche? I was seeing it every now and again on TV cooking competitions, considering it's a corn disease I was interested so treated it like the chicken in a taco. Surprisingly lovely. I didn't get it fresh, I bought it in a can from Amazon.
